Think of this as a simple, reliable starting point for refining and personalizing your pour over technique. For a simple and consistent 1-cup pourover, start with 15 grams of coffee ground to a medium setting (around 600 microns or a 3 on a Fellow Ode with Gen 2 Brew Burrs) Heat 250 ml of water to 200°F. 0:00-0:45; Begin your brew by pouring 30 ml of water over the grounds and gently swirling to fully saturate them, allowing the coffee to bloom for about 45 seconds. 0:45-1:05; At 0:45 continue pouring steadily until you reach 150 ml, finishing around 1:05. 1:05 - finish; Let the water level draw down until the bed is just exposed, then slowly pour up to 200 ml. Once the water drops again, complete your final slow pour to 250 ml and give the brewer a small swirl to flatten the bed. *Your total brew time should land between 2:30 and 3:30, resulting in a balanced, well-extracted cup.

Tasting notes are simply a guide to help you understand and explore a coffee’s unique flavor profile. What you taste may vary based on your palate and how the coffee is brewed.

No. We do not add any flavorings or ingredients to our coffee beans. All of the flavors you taste come naturally from the coffee itself, influenced by its origin, processing, and roast.

Not at all. Our espresso blends are crafted to be versatile, so you can brew them using your preferred method whether that’s espresso, drip, pour over, French press, or more.

We roast everything American Light. We will adjust roasts slightly to bring out the different notes in each individual coffee.

All of our coffee is whole bean. If you need a recommendation for a grinder, emails us and we’ll help you find one!

The Roaster’s Choice subscription is our way of sharing the variety and seasonality of coffee with you. Each shipment features a single-origin coffee that we have carefully sourced. Most subscribers will not receive the same coffee twice, although weekly subscriptions or multiple active subscriptions may occasionally include repeats. If that is the case, you are always welcome to share your preferences with us. This subscription is also designed to highlight coffee’s natural harvest cycles. Most producing regions have one annual harvest for specialty coffee, which means each origin has a peak season when the coffee is at its freshest. We plan our sourcing around these harvest windows so you receive coffees like Rwanda, Ecuador, and others at the time of year when they are tasting their best.

All of our blends are available for subscription, but our Roaster’s Choice Single Origin Subscription is just that, our Roaster choosing. Don’t worry though, while you may not be choosing, we’re excited to show off and send really incredible coffees.

Your credit card will be charged in accordance with your subscription interval and upon charging will enter are roasting queue. Orders are typically roasted the business day after the charge and ship out 1-2 days after.

Yes! We do offer gifts subscriptions in 6 and 12 month intervals on our blends and Roaster’s Choice subscriptions.

Your coffee is very fresh when it ships, and in many cases it may even be too fresh. We typically ship orders within one to two days of roasting, though some single-origin coffees are rested for one to two weeks before shipping. We recommend allowing your coffee to rest for several days after roasting. While freshness is important, coffee also needs time to de-gas, which helps the flavors fully develop. Lighter roasts in particular benefit from additional rest and will continue to open up as they de-gas, sometimes improving for up to a month after roast.

Subscriptions to our blends save 10% and subscriptions to our Roaster’s Choice Single Origin save far more with subscribers receiving anywhere from 15% to over 35% on the coffees they receive when compared to a one time purchase.
