Juan Pena ferments this sidra unwashed (natural) for 120 hours in oak barrels that previously aged rum. The coffee is simultaneously very clean yet still rich and full bodied. It presents an array of flavors ranging from tropical fruit sweetness to juicy blackberry notes along with a subtle woodsy wine character, with no one flavor or note dominating the others resulting in tremendous complexity and depth of flavor.
