This is a rich coffee with a lot going on; somehow it's savory and sweet with a pleasant, tart acidity that all balances very cleanly.
San Pedro Yosotatu comes from the Pluma region within Oaxaca, where much of the coffee is of a single variety Pluma Hidalgo. This region's production is in the hands of smallholder farmers working at high elevations (up to 2200 M). In the last several years, these farmers have found buyers who are excited about the quality and character of their coffee and who are willing to pay more than farmers have historically been offered for their coffee in this region. The result is increased stability and opportunity to invest in their production and quality.
