This coffee has everything that we are looking for from a Mexico coffee, a rich dark chocolate character with subtle fruit notes that are very present but not in-your-face.

WHY IT MATTERS
Now that we've been roasting coffees from Mexico for a couple of years and have seen how much people love them, we've got a good sense of what we're looking for. The result is that this is our first coffee from Mexico that was purchased as a "forward contract." In short, this means that we worked with an importer who has relationships with farmers in Oaxaca and agreed to buy a certain amount coffee months before the coffee had even made it to the US. This matters, because the more coffee a farmer or co-op has sold before it's time for export, the more they can focus on quality with a sense of personal economic stability, reducing the anxiety of wondering whether they'll be able to sell their coffee once it's harvested and processed.
